Breakfast

I’ve been asked a few times what kind of foods we eat, so I’m starting with our regulars for breakfast. Recipes will follow for each.

We don’t eat a lot of meat, some chicken and fish, dairy is mainly yogurt and cheese for me and the kids only have cheese. So the kids will have what I have pictured except the yogurt, they have banana and blueberry oatmeal, made with water and nut milk sometimes with chia seeds and a nut butter, always add a bit of local honey, we rotate from oatmeal to eggs and a new addition oat bars then pancakes at the weekend. .

Breakfast Cassarole… Chopped veggies, usually red and green pepper, red onion and mushrooms, 12 eggs whisked.. This makes the end result more fluffy 😊 some seasoning, we use mixed herbs and garlic and grated cheese. Baked in the oven and cut into 12 squares, I have 2 with either rye bread, homemade bread toasted or wholemeal thins. The kids have 1 with toast, beans and avocado.

Banana oat pancakes with fage yogurt mixed with maqui Berry powder or strawberry protein powder and fruit.

Blueberry oat bars, super easy to make and can be made into chocolate by adding some cacao powder. I have them with yogurt and some extra fruit the kids have them with coconut yogurt.

We do use cereal every so often for the kids breakfast and occasionally for after dinner snack, we use chocolate alphabites, they have just 6 ingredients and a lot less sugar!
